The Louisiana shrimp is the signature, with a sauce you can have mild, medium or fiery, and the seasoned fries alongside it are a dish in their own right. The ceviche gets top marks, the 4 Olas plate lines up all four house aguachile salsas, and the chicken quesadilla is unexpectedly tender.
