Tacos Marcos is the street-taco stand done the complete way. Meats and vegetables grill right out front. The tortillas are homemade, there is a self-serve table of toppings and salsas, and complimentary beans with grilled green onions land before you have decided anything.
The move regulars insist on is the costilla, a beef rib taco that comes off the grill crispy and that people report finding nowhere else. Asada and pastor and tripas hold the standard line, and the quesadilla cheese draws its own border-crossing praise. Family-owned, BYOB in the street-stand custom, with a large parrot in residence who considers himself part of the service.
One practical note from the tortilla scholars: the flour holds together better than the corn here, a rare place where that is the right call.
